Module Overview

Food Pedagogy: Exploring Culinary Education

This module provides an overview of the current state of knowledge of food pedagogy and opens a critical discussion on whether or how food literacy and pedagogy could be used to transform society and to tackle a number of issues facing our modern lives. Exploring food pedagogy from traditional spheres through to contemporary forms of culinary education and teaching practice both in Ireland and internationally, learners who successfully complete this module will be competent in applying learning theories to their teaching practices in formal and informal educational contexts. The module uses a number of learning and teaching methods including formal lectures, guest speakers, case studies and independent learning to critically engage with the subject and to creatively explore future possibilities within this field among a number of different scenarios. This module aims to familiarise the learner with the applications, principles and practices of culinary education, while in parallel developing their digital literacy by exposing them to the latest eLearning practices.
