How can knowledge of Irish Food history benefit Irish food producers, marketers, tourism professionals and the hospitality industry? This module explores Ireland’s rich food history and culture and exposes the students to this lesser known emerging field of food history. From placenames to mythology, storytelling, poetry and songs, food and hospitality is a common theme that runs through Ireland’s past. However, when the topic of food is discussed within the historiography of Ireland, the focus tends to be on the consequences of the Great Irish Famine (1845-52), yet recent research clearly demonstrates that Ireland’s culinary culture is much more nuanced than was previously understood. This module will provide the student with a thematic and chronological understanding of the cultural history of Irish food and drink from early Christianity to twenty-first century Ireland.
This module will have an applied approach in that students will be asked to consider how Irish businesses can use history to promote authenticity, heritage, tradition, and leverage the country’s rich historical past in marketing and promoting food products and services.
