& Launch of Centre for Applied Culinary Nutrition by Chef Patrons Domini Kemp & Derry Clarke

On Tuesday 27th November, at the first Applied Culinary Nutrition Research Symposium, post-graduates of the MSc in Applied Culinary Nutrition, showcased and shared their innovative practice-based research with industry peers and interested parties, on how they are currently using it to innovate food for health and wellness and positively affect wellbeing.

Also on the evening two of the programme Chef Patrons: Ms. Domini Kemp and Mr. Derry Clarke officially launched the IT Tallaght Centre for Applied Culinary Nutrition

Areas of current research in this centre are: hospital food service, portion control,  health strategy, care home catering, diet and the aged, chef self-care, innovative food service approaches, marketing health and wellness, gut biome and menu design, recipe modification for health, food education, app design for the low FODMAP diet,  community dining practices and health, the role of nutrition in major depressive disorders
